Anybody know if these vehicles use CAN-Bus technology? If so, for which systems?

Yes it does. ABS Module, Audio Unit, Instrument Cluster and SJB. Refer to Module Communications Network 418-00-i in the 2007 Mustang Workshp Manual.

I have programed many OEM nav radios and on the mustangs the can bus started on 05.
